I know cabling topology of AIRTEL. A fiber from one port of OLT is connected to one ODF, then from ODF 8 different cables go and terminate into 8 FAT boxes. What will the ISP do after their fat boxes are totally saturated? which actually happens in huge apartments.

one main fiber can handle way more connections. So no need to worry

6 connections in my fat box and im facing slow speeds, if they add more than 20 on the same fiber line then I will be doomed.

If all users are downloading at same time then you will get slow speed no matter what. This is rare case

GPON can have upto 120 ONTs on one fiber.
EPON can have upto 64 ONTs
For OLT ISPs can use 10G SFP modules to have more bandwidth available to users.
Also one fiber cable can have 2,4,6 or more fiber cables which can each support 64/128 connections.
