Anyone here on the Airtel Xstream Fiber Broadband 300Mbps Plan

Strange. Throttling is very unlike of Airtel but I have not used an Airtel connection more than 100 Mbps. I was planning upgrade my VDSL to 300 Mbps once the cabling in my Area is done but now I'm gonna hold on to Hathway/Jio till it acts up.

Would I be able to hook the GPON to my router and not have the Huawei do anything else?

Yes, you can put GPON in bridge mode and have the pppoe connection setup in your router.
